You have raised a very practical and quite important point. Hopefully those
who are "experienced" will be mindful of this.

I doubt mentees list (i presume mailing list) will make any much
difference. The experience will happen where the action is; So a situation
where fairly experienced (who are highly interested to participate and
learn) are given are nominated and given strong consideration in becoming
part of the EC is one of the ways one can learn.
