[NCUC-EC] Policy Committee applications extension

Hi everyone

We got 3 applications for the 2 roles of Policy Committee

In consultation with PC and NCSG Chair, it was suggested we extend
this deadline for a bigger pool of candidates.

I'll extend then until Friday.
